How to Make Simple Coconut Curry 

Ingredients

– Coconut oil – Curry powder – Yellow onion  – Garlic – Ginger – Carrots – Bell peppers – Vegetable broth – Salt – Yukon gold potatoes  – Diced tomatoes – Coconut milk – Turmeric – Frozen peas – Spinach – Lime juice – Minute rice

Cook curry in oil and then add onion-garlic-ginger.

Add carrots, peppers, broth, and salt and simmer (covered).

Stir in potatoes, tomatoes, milk, salt and Turmeric. Boil, reduce to a simmer and cover.
