Baked Cod with Peach & Tomato Salsa

Have you ever put salsa on fish?! Do it! It's delicious. We promise! Add homemade peach & tomato salsa to white fish, and you'll be in summertime heaven.

Ingredients

  • cooking spray
  • 1 Pound cod fillets
  • 1 Tablespoon olive oil
  • ¾ teaspoon salt divided; adjust according to the amount of cod you have
  • ½ teaspoon pepper
  • 2 peaches pitted & chopped
  • 2 medium tomatoes chopped
  • 1 small red onion chopped
  • 3 Tablespoon lime juice
  • 2 Tablespoon fresh cilantro chopped

Instructions

  • Preheat oven to 450. Line a baking sheet with foil and spray with cooking oil. Lay cod pieces on foil. Season with oil, ½ teaspoon of the salt, and all the pepper. Bake for 10-12 minutes or until cooked through.
  • While cod is baking, make salsa. Combine peaches, tomatoes, onion, lime juice, remaining ¼ teaspoon of the salt, and cilantro in a medium bowl. Mix ingredients together.

Notes

🍑 To plate...serve cod topped with a generous spoonful of peach salsa. Serve alone, with a salad (like our amazing Grapefruit Arugula Salad), or with a starchy side of your choice (i.e. with rice, couscous).
🍑 You'll want soft and ripe peaches, but not overly ripe, for this recipe.
🍑 You'll likely have extra peach and tomato salsa leftover, so enjoy it with some tortilla chips for the next few days!
