This grapefruit salad is an explosion of flavor and it only takes 15 minutes to make! Grab a knife, cutting board, & measuring cups, and you're good to go!
Cut grapefruit into segments [click here for instructions]. Set aside the grapefruit shells to make dressing.
Combine grapefruit pieces with arugula, mint and diced avocado in large bowl.
Squeeze all the juice from the grapefruit shells into a Pyrex measuring cup or small bowl. Combine grapefruit juice with oil, red wine vinegar, salt & pepper, and stir.
Notes
Serve salad as a main course. You can dress the whole salad or dress individual servings. OR serve salad as a side dish. We paired ours with Baked Cod with Peach & Tomato Salsa.
