One Pot Easy Pea-sy Cheese Tortellini

Ingredients

  • 1-2 Tablespoon cooking oil
  • ½ small onion (chopped)
  • 2 cloves garlic (minced)
  • 1 Pound ground sweet Italian sausage (we used pork sausage)
  • 2 14 ounce cans crushed or diced tomatoes
  • 1.5 cups chicken stock/broth
  • cup heavy cream
  • 2 cups spinach
  • 2 cups frozen peas
  • ½ teaspoon salt
  • 1 teaspoon black pepper
  • 20 ounce package cheese tortellini
  • ½ cup parmesan cheese (shredded or shaved)

Instructions

  • Heat oil in a 5qt pot (my fave pot!) on medium heat. Add onion and garlic, and cook for 2 minutes. Stir in sausage and cook until it’s no longer pink, breaking it up into smaller chunks (with a potato masher, if you have one) as it cooks.  
  • Stir in tomatoes, chicken broth and heavy cream. Add spinach and peas, season with salt and pepper, and bring to a boil. 
  • Add tortellini and cheese, and cook according to tortellini package instructions. Stir together tortellini and sauce mixture until well blended.

Notes

Serve tortellini on plate or in bowl. If you like, sprinkle extra parmesan atop.
