Combine grapefruit pieces with arugula, mint and diced avocado in large bowl.
Squeeze all the juice from the grapefruit shells into a Pyrex measuring cup or small bowl. Combine grapefruit juice with oil, red wine vinegar, salt & pepper, and stir.
Serve salad as a main course. You can dress the whole salad or dress individual servings. OR serve salad as a side dish. We paired ours with Baked Cod with Peach & Tomato Salsa.We recommend that all meals for children be served with milk.
