Grilled Cheese Sandwich for Kids with Creamy Tomato Soup

The ultimate, tried-and-true combo: grilled cheese & tomato soup! We take this classic sandwich for kids, and make it into fun shapes!

Grilled Cheese Cut Outs

  • 8 slices bread (or more)
  • 4 Tablespoon butter (or more)
  • 8 slices cheese (or more)
  • cooking spray (optional, depends on what kind of pan you have)

Instructions

  • Heat a pan on medium. Once heated, add oil, onion & garlic. Cook for 3-5 mins. Then scoop pan contents into Vitamix or blender.
  • Add the rest of the soup ingredients (except for milk) in Vitamix/blender. Process on high speed for 4-5 minutes. Add milk and process an additional minute.
  • Pre-heat a skillet over medium heat (non-stick is preferable). Spray the pan if necessary. Generously butter the outside of two slices of bread. We used about ½ T of butter per slice. Place one slice of bread with its buttered-side down onto the skillet. Add 2 slices of cheese and place the second slice of bread on top, buttered-side-up.
  • Grill the sandwich for 1-2 minutes or until lightly browned, and then flip over. Once cheese is melted and both sides are browned, remove from skillet. Wait a couple mins for it to cool. Then, use a cookie cutter of choice to cut shapes into your grilled cheese.

Notes

🍅 Heating the soup: If using a Vitamix, your soup should heat up as it is processed. But you can also blend ingredients, transfer to the stove, bring soup to a boil and reduce to a simmer for 4-5 mins.
🍅 The butter on the sandwich should keep the sandwich from sticking to the pan, but just in case, consider using a light coating of cooking spray on your pan.
🍅 Let the sandwiches cool for a couple minutes before you cut them into shapes or they won't hold their form. Cookie cutters are the best tools to make shapes.
🍅 You can sprinkle the soup with oyster crackers or goldfish crackers.
