  • 1.5 - 2 lbs boneless, skinless chicken breasts or 4 breasts, not too thick
  • 1 teaspoon basil dried
  • 1 teaspoon rosemary dried
  • 1 teaspoon thyme dried
  • ½ teaspoon Seasoned Salt
  • ½ teaspoon paprika
  • ¼ teaspoon crushed red pepper
  • ¼ teaspoon ground black pepper
  • 3 Tablespoon butter divided
  • 2 cloves garlic minced
  • ½ cup chicken broth or stock
  • ¼ cup lemon juice
  • ½ Tablespoon fresh parsley, finely chopped (optional)

Instructions

  • Pat chicken dry. Mix all seasonings in a small bowl. Sprinkle each side of the dry chicken breasts with roughly ½ teaspoon of that seasoning mix, distributing it evenly on the chicken.
  • In a large skillet over medium heat, melt 2 tablespoon of the butter. Lay chicken down in skillet and cook for 3-5 minutes on each side, depending on the thickness of the chicken. Remove chicken from skillet once fully cooked (temp should be 165 °).
  • Lower the heat on the skillet. Melt remaining 1 tablespoon of butter and sauté garlic for 30 seconds. Add chicken broth and lemon juice, and simmer sauce for 1 minute. Return chicken to pan and simmer for 2-3 minutes more, turning chicken once to cover both sides with the sauce. Serve chicken topped with fresh parsley for garnish.

Notes

-The thinner the chicken is cut, the faster it will cook. A meat thermometer should read 165 ° when chicken is fully cooked.
-Make sure your skillet isn’t too hot when you sauté the garlic or else the garlic will burn.
-Feel free to drizzle the remaining sauce in the skillet over the chicken when plated.
-This lemon butter chicken paired super well with parmesan asparagus and garlic knots.
