Beef & Snow Pea Stir Fry

Your kids will definitely eat their veggies when they're immersed in this addictive sauce. Your family will be hooked on this Beef & Snow Pea Stir Fry!

Ingredients

  • 2 cloves garlic, minced
  • ½ - 1 teaspoon ginger, minced, grated or finely chopped (or ⅛ - ¼ t ginger powder)
  • ½ cup soy sauce
  • ½ cup sherry wine or apple juice
  • 2 Tablespoon brown sugar
  • 2 Tablespoon cornstarch
  • 1 - 1 ½ pounds beef skirt steak, cut into strips or bite sized pieces (or flank steak or flat iron steak)
  • 4 Tablespoon sesame oil (divided)
  • 8 ounce can sliced water chestnuts (drained)
  • 15 ounce can cut baby corns (drained)
  • ½ - 1 medium zucchini (sliced or cut into quarter rounds)
  • 1 cup mushrooms (sliced)
  • 1 cup snow peas
  • 2 cups instant rice (brown or white, you choose your serving size)

Instructions

  • First, the sauce. With a whisk or fork, combine garlic, ginger, soy sauce, sherry, brown sugar & cornstarch in a bowl or Pyrex Measuring Cup.
  • Place your beef in a separate bowl and pour 3-5 Tablespoons of sauce on top of the beef and stir. Put aside and let marinate for 5-10 minutes.
  • Meanwhile, heat a large pan on medium heat and add 2 Tablespoons of the sesame oil. Add all veggies (except snow peas) and cook for 5-7 minutes, stirring a few times. Add remaining sauce to the veggies, stir in snow peas and cook for another 5 minutes. Remove from heat.
  • Make the instant rice according to directions on box.
  • While the veggies and rice are cooking, start cooking the meat. Heat a large pan or wok on high heat. Once totally heated, add the remaining 2 Tablespoons sesame oil and the beef, with its sauce. Cook beef for 3-5 minutess on each side.
  • Turn heat down to low and stir in the veggie mix. Cook all together for a minute or so. Remove from heat.

Notes

🥩The Sherry can be replaced with apple juice.
🥩Double the sauce (and refrigerate that second batch) if you anticipate leftovers. It's kind of the best part!
