🍚 Perfect Pumpkin Rice Recipe

Heat 1 tbsp olive oil in medium sauce pan or dutch oven. Add onion and garlic and sauté for 2-3 minutes or until fragrant.
Add coconut milk, vegetable broth, pumpkin, salt, pepper, ginger and thyme to the pan and stir together.
Stir in white rice, bring to a boil, cover and simmer for 15-20 minutes.
Remove lid, fluff rice and serve topped with a pinch of pumpkin seeds and chopped parsley .
Be careful not to over-or under-cook the rice. Rice should be dense and fluffy, with all the liquid fully absorbed.
Adjust seasoning as desired. We recommend starting small and tasting along the way!
