Easy Beef Teriyaki Bowl in Under 30 Minutes

This beef teriyaki bowl is a must-try! Sweet and savory ground beef is served over steamed rice with fresh, crunchy veggies. It’s delicious, simple, and ready in just 28 minutes!

Ingredients

Beef and Vegetables

  • 1 Tbsp olive oil
  • 1 small onion chopped or diced
  • 2 garlic cloves minced or finely chopped
  • 1 bell pepper chopped or diced
  • 1 lb ground beef
  • 2 medium carrots shredded or grated
  • 1 cup broccoli florets
  • 2 green onions thinly sliced (optional)
  • 3-4 cups cooked minute rice

Teriyaki Sauce

Instructions

  • Heat olive oil in a large pan on low-medium heat. Add onions, garlic and bell peppers and cook for 2-3 minutes, stirring occasionally. 
  • Add and brown beef for 2-3 minutes, breaking it up with a potato masher or spatula  as you go. Add carrots and broccoli and cook together for 5-6 minutes or until beef is no longer pink and broccoli is soft. Strain the meat or use a baster to remove excess liquid if necessary.
  • Meanwhile, prepare the teriyaki sauce. Whisk together soy sauce, water, white wine vinegar, sesame oil, sugars, garlic and ginger in a small saucepan over medium heat.
  • In a small bowl, combine cornstarch with cold water and whisk until cornstarch is dissolved. Slowly add mixture to teriyaki sauce and simmer on low until sauce reaches desired thickness.
  • Pour sauce over beef and vegetables and stir together. Serve beef teriyaki over rice, pasta or your favorite grain. Optional: Top with finely chopped green onion.

Notes

Don't overcrowd the pan- Overcrowding can prevent heat from distributing evenly, causing some ingredients to be undercooked while others overcook. Use a large enough pan or skillet for this recipe, and if you want to double it, make it in two batches.
Taste test- Taste the teriyaki sauce as you make it and before adding it to your meat mixture. You can adjust the sweetness or saltiness by adding more soy sauce or sugar, as you like.
