Easy Vanilla and Cinnamon Pancakes

Makes about 10 small pancakes

  • 1 cup flour
  • 1 T brown sugar
  • 1 T white granulated sugar
  • 1/2 t salt
  • 1/2 t baking powder
  • 1/2 t baking soda
  • 1 cup milk
  • 1 egg
  • 2 T melted butter
  • 2 t vanilla
  • 1/2 t ground cinnamon
  • 2 T butter


  1. Combine and mix dry ingredients together in a large bowl. Combine and whisk together wet ingredients in a separate, medium bowl. Slowly add wet ingredients to bowl of dry ingredients and whisk until evenly mixed.

  2. Meanwhile, melt 2 T butter on a skillet at medium heat.

  3. Pour batter onto heated skillet, about 1/4 cup at a time. Once bubbles appear on pancake (after about 1-2 mins), use a spatula to flip pancake over. Cook pancake for another 1-2 mins or until lightly browned.


Serve pancakes with butter, syrup or other desired toppings.
