  • In a large skillet, heat 2 Tbsp olive oil. Add chopped onion, bell pepper and garlic and cook for 5 to 7 minutes or until veggies start to soften.
  • Add ground turkey and cook, breaking up into pieces, until no longer pink.
  • Add seasoning, black beans, corn, tomatoes with green chilies, enchilada sauce and tortillas and stir well to combine.
  • Bring mixture to a light simmer and cook for about 5 minutes, stirring occasionally. Top with cheese and continue to cook another few minutes or until cheese melts.
    Top with cilantro and any other desired toppings, like sour cream, avocado, limes or green onion.

  • Use crunchy tortilla strips- Baked or fried corn tortillas work best since they’re less likely than soft tortillas to turn soggy. Make your own strips, break up crunchy corn tortillas, or use store-bought tortilla strips.
  • Control the spice - Pick an enchilada sauce that matches your heat preference, and feel free to add a little extra taco seasoning if you want a bolder kick.
  • Jazz up the toppings- Make your turkey enchilada skillet your own with favorite toppings like a dollop of guacamole, sour cream, or chipotle crema, plus crunchy tortilla chips. You can also add fresh extras such as sliced avocado or red or green onion for even more flavor and texture.
