Pizza Muffins with Biscuits

These pizza muffins with biscuits are the ultimate kid-friendly finger food! Just cut up your biscuit dough, toss with butter, sauce, and seasonings, fill your muffin tin, and bake. Ready in 20 minutes and picky eater approved!

Ingredients

  • 1 16 oz Tube of jumbo biscuits 
  • 3 Tbsp butter melted
  • 1/4 tsp garlic powder
  • 1/4 tsp parsley flakes
  • 1/4 tsp dried basil
  • 1/4 tsp dried oregano
  • 1/4 tsp dried thyme
  • 1 cup shredded mozzarella cheese divided
  • 1/4 cup pizza sauce and more for dipping

Instructions

  • Preheat oven to 425 and spray a 12-cup muffin pan with cooking spray.
  • Break apart tube of biscuits and divide each biscuit into six small pieces, placing pieces into a medium bowl.
  • Melt the butter and mix it with the seasoning, then drizzle evenly over the biscuit pieces. Add the pizza sauce and 1/2 cup mozzarella cheese, then stir until everything is well coated.
  • Divide seasoned biscuit and cheese mixture evenly into 12 muffin tins. Sprinkle on remaining 1/2 cup of mozzarella and bake for 12-15 minutes or until golden brown.
  • Let the muffins cool for a few minutes, then gently run a knife around the edges to loosen and remove them. Serve with warm marinara sauce on the side for dipping.

Notes

  • Cut biscuits into six even pieces — Use kitchen shears  to cut each biscuit in half and then into thirds. This gives you the perfect size for a standard muffin tin.
  • Grease the pan generously — Don't skip this step! A well-greased muffin tin is the difference between pizza muffins that pop right out and ones that stick and fall apart.
  • Simplify the seasonings — Don't have all five spices on hand? No problem! Swap the garlic powder, parsley flakes, dried basil, dried oregano, and dried thyme for a pre-mixed Italian seasoning blend and a pinch of garlic powder. You'll get very similar flavor with half the measuring!
  • Don't overfill — Fill each muffin cup about ¾ of the way full. Overfilling causes the toppings to spill over the sides and makes them harder to remove cleanly.
  • Go easy on the sauce — Just ¼ cup of pizza sauce is all you need for the whole batch. It sounds like a little but trust us — too much sauce makes the bottoms soggy, and you'll want plenty left over for dipping anyway!
  • Loosen before removing — Run a knife gently around the edges of each pizza muffin before lifting them out of the tin.
  • Serve immediately — Pizza muffins are best straight out of the oven with a side of warmed pizza or marinara sauce for dipping.
