    Grapefruit, Avocado and Arugula Salad

    We love the sweet and sour taste of grapefruit! It's so juicy and can add so much flavor to a dish! And when you combine grapefruit with the bitter zest of arugula, the umami flavor of avocado, and the cooling sensation of mint, you have an explosion of flavor!

    This no-cook meal only takes about 15 minutes to put together. And the most time-consuming part is preparing the grapefruit. The rest is just chopping and mixing.

    Cutting the Grapefruit

    There are many ways to cut a grapefruit, but I like this one because with this method, you totally bypass the bitter pith (the white stuff). First, we cut the grapefruit in half around the circumference (so the stem is at the top of one of the halves). Next, we look to see all the segments, which are separated by thin membranes. Using a sharp knife, carefully carve one segment of grapefruit away from its membrane, as close as possible to the membrane. Then scoop out the flesh. We used a sharp, paring knife to cut the segment away from the membrane and a serrated knife to scoop the segment out. Continue this process until all the segments have been removed.

    Note: Of course, there are tools designed specifically for cutting grapefruit. I still don't own one and need to get on that! But this article I discovered from Knives.com reviews some great options.

    The Salad Dressing

    To make the grapefruit salad dressing, we squeezed the juice from the grapefruit's shells into a Pyrex measuring cup (any small bowl works just fine). This messy part was a huge hit with the kids, and it was surprising to see how much juice was still in the grapefruit. After adding in the other dressing ingredients (red wine vinegar, olive oil, s&p), we were ready to roll.

    This grapefruit salad can certainly be served as a standalone dish, but we paired ours with Baked Cod with Peach & Tomato Salsa. We thought these went together beautifully!

    🍅Separate the parts! Kids may like their fruit and avocado separate from the greens. Dressing on the side. 

    🍅Add croutons! Sometimes croutons get kids more excited about salads. Worth a try!

    Grapefruit, Avocado & Arugula Salad

    Ingredients

    • 2 medium grapefruit
    • 5 ounce arugula
    • ¼ cup fresh mint de-stemmed & chopped
    • 1-2 avocado pitted & diced
    • ¼ cup olive oil
    • 1 Tablespoon red wine vinegar
    • ½ teaspoon salt
    • ¼ teaspoon pepper

    Instructions

    • Cut grapefruit into segments [click here for instructions]. Set aside the grapefruit shells to make dressing.
    • Combine grapefruit pieces with arugula, mint and diced avocado in large bowl.
    • Squeeze all the juice from the grapefruit shells into a Pyrex measuring cup or small bowl. Combine grapefruit juice with oil, red wine vinegar, salt & pepper, and stir.

    Serve salad as a main course. You can dress the whole salad or dress individual servings. OR serve salad as a side dish. We paired ours with Baked Cod with Peach & Tomato Salsa.
