Notes on ingredients (full list of ingredients and quantities listed in the recipe card below):

  • Vegetable broth– chicken broth will also work if you don’t want this dish to remain vegetarian.
  • Bay leaves– just be sure to before blending soup.
  • Thyme– we use dried thyme since we tend to have it handy in our pantry!
  • Salt & pepper– for added flavor
  • Russet potatoes– or Yukon gold potatoes, peeled and cut into 1 or 2″ pieces
  • Butter– we prefer unsalted
  • Leeks– sliced & rinsed, not including dark green tips
  • Celery– chopped, and save the leaves for garnish!
  • Garlic -minced or chopped
  • Cream– we use heavy cream for added creaminess and thickness! For a dairy-free option, consider coconut milk.

Vitamix– for blending the soup

Thermoworks silicone spatula– for scraping soup out of blender.

Veggie Peeler– for peeling potatoes. We also love Opinel’s peeler for little hands if kids are helping out.

Step 1: Sauté leeks, celery and garlic in butter.

Step 2: Meanwhile, bring broth to a boil. Add spices, potatoes and veggies and boil for 20 minutes.

Step 3: Pull out bay leaves and combine and blend all ingredients in Vitamix or blender until everything’s been fully blended. Note: If there is more liquid than will fit in the blender, put several batches in a blender/Vitamix until everything’s been fully blended.

Step 4: Return blended soup to the pot, add the cream, stir and serve.

Place a few torn celery leaves on top of each bowl for garnish.

✔️ Cooking Tips and Variations

  • An immersion blender may be used if preferred to keep everything in the soup pot while blending.
  • Use a spatula to scrape blended potato leek soup out of Vitamix and back into the soup pot.
  • Dairy Free! Not to state the obvious, but eliminate the cream and butter. Coconut milk is the perfect substitute for cream. As far as the butter goes, I would replace it with 2 T of either olive oil, coconut oil, or Earth Balance.
  • Vegan See above regarding the butter and cream. And make sure your vegetable base is vegan. I absolutely love this Better than Bouillon brand.
  • Cheese– add shredded cheese on top of soup.
  • Bacon-Top Vitamix potato leak soup with bacon pieces or bits for added flavor.
  • Serve soup with celery leaves for garnish, and bread, baked cheese crisps, or bread sticks on the side for dipping.

Leeks can be sandy and dirty, so it’s important to wash them well. First, trim and discard the root ends and thick, dark green parts. Halve the leeks lengthwise and rinse under cold water, separating the layers to eliminate any dirt that may be tucked inside.

How should I store this soup?

This Vitamix potato leek soup can be refrigerated in an airtight container for up to 4 days or in the freezer for up to 3 months. To reheat, thaw soup overnight in the refrigerator and then warm on the stove or in the microwave.

Vitamix Potato Leek Soup

This Vitamix Potato Leek Soup is the perfect comfort food! Warm, thick, and creamy and sure to satisfy the whole family!

Ingredients
  

  • 8 cups vegetable broth
  • 2 bay leaves
  • 1 Tablespoon thyme (dried)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 russet potatoes (peeled, cut into 1 or 2" pieces)
  • 2 Tablespoon unsalted butter
  • 2 large leeks (sliced & rinsed, not including dark green tips)
  • 2 stalks celery (chopped, save the leaves)
  • 2 cloves garlic (minced or chopped)
  • 1/2 cup cream

Instructions
 

  • Heat a skillet on medium and add butter. When butter has melted, add leeks, celery and garlic. Cook for 5-7 mins.
  • Meanwhile, in a stock pot, bring broth to a boil. Add spices, potatoes and veggies and boil for 20 mins.
  • Once the 20 minute boil is up, pull out the bay leaves, and combine and blend all ingredients in Vitamix or blender until everything's been fully blended. Note: If there is more liquid than will fit in the blender, put several batches in a blender/Vitamix until everything's been fully blended.
  • When blended soup is back in the pot, add the cream, stir and serve. Place a few torn celery leaves on top of each bowl for garnish.
