  • Ground turkey-Ground turkey is often our go-to because it cooks up quickly and soaks up tons of flavor—but ground beef, chicken, or sausage all work just as well if that’s what you have on hand.
  • Black beans – In our experience, black beans hold their shape without getting mushy and add plenty of protein while keeping the flavor mild and balanced. Red kidney beans, pinto beans, or even white beans all make easy, tasty substitutes.
  • Tomatoes- We love using Original Rotel Diced tomatoes and Green Chilis for an extra kick of flavor, but Mild Rotel or plain diced tomatoes work just as well if you prefer something less spicy
  • Enchilada sauce– Use your favorite brand and pick the heat level that works for your family, whether that’s mild, medium, or hot.
  • Corn tortilla strips– You can make your own toasted tortilla strips by baking or frying soft corn tortillas, or keep it easy with a store-bought option. Both crunchy corn tortillas (broken into strips) or pre-made tortilla strips work great here.
  • Cheese– A Mexican blend works well, but shredded cheddar or Monterey Jack are also great options.

Step 1. Cook veggies in oil.

Step 2. Add ground turkey and cook until no longer pink.

Step 3. Add seasoning, black beans, corn, tomatoes with green chilies, enchilada sauce and tortillas and stir well to combine.

Step 4. Simmer for five minutes, stirring occasionally, and then top with cheese and cook until cheese melts. Add desired toppings and enjoy this easy skillet dinner!

Store leftovers in an airtight container in the refrigerator for 3–4 days. This dish can also be kept in the freezer for up to 3 months. However, we recommend waiting to add the tortillas until ready to serve so they don’t become mushy. Adding the cheese and cilantro at the serving stage also helps keep the skillet tasting fresh.

Reheat on the stovetop over medium heat or in the microwave, adding a splash of enchilada sauce or tomato sauce for added moisture.

Why is my turkey enchilada skillet watery?

Ground turkey gives off moisture as it cooks, and enchilada sauce and beans add extra liquid. Be sure to drain the beans well, simmer uncovered, and let the skillet rest so the sauce can thicken before serving.

How can I keep my tortillas from becoming mushy?

Soft tortillas absorb sauce quickly. Use baked or fried corn tortilla strips and add them at the end, or serve them on the side for dipping or scooping.

Ingredients
  

  • 2 Tbsp olive oil
  • 1 small white onion (chopped)
  • 1 red bell pepper (chopped)
  • 1 tsp garlic (minced)
  • 1 lb ground turkey (extra lean)
  • 1 Tbsp taco seasoning
  • 1/2 tsp Kosher salt
  • 1/4 tsp ground black pepper
  • 1 15 oz can black beans (rinsed and drained)
  • 1 15.25 oz can corn (drained)
  • 1 10 oz can diced tomatoes with green chilis (drained)
  • 1 15 oz enchilada sauce
  • 5 small crunchy corn tortillas (cut or broken into strips)
  • 1 cup Mexican cheese (shredded)
  • 1 bunch cilantro (chopped)

Instructions
 

  • In a large skillet, heat 2 Tbsp olive oil. Add chopped onion, bell pepper and garlic and cook for 5 to 7 minutes or until veggies start to soften.
  • Add ground turkey and cook, breaking up into pieces, until no longer pink.
  • Add seasoning, black beans, corn, tomatoes with green chilies, enchilada sauce and tortillas and stir well to combine.
  • Bring mixture to a light simmer and cook for about 5 minutes, stirring occasionally. Top with cheese and continue to cook another few minutes or until cheese melts.
    Top with cilantro and any other desired toppings, like sour cream, avocado, limes or green onion.
