Quick and simple– Once you’ve sautéed your veggies, all you need is a high-powered blender or Vitamix to make this tomato soup! The heat generated by the Vitamix is sufficient to cook it, thanks to the friction it produces.

Versatile– The best part about our Vitamix tomato soup is that it compliments so many other dishes. Serve this soup on its own, or with fresh bread, a side salad, or a sandwich, like a grilled cheese.

Veggie-packed! We love how this soup is loaded with some of our favorite nutrient-dense veggies, like tomatoes and carrots!

Kid-friendly- This is a great recipe for kids to help with, because all they are doing is adding ingredients to a blender and watching the magic happen as everything mixes together.

🛒 Ingredients

This tomato soup requires mostly pantry staples, making it an easy last-minute meal for busy nights! You will find notes on key ingredients below. Please see the recipe card below for a full list of ingredients and quantities.

  • Whole peeled tomatoes– We love canned, whole tomatoes like San Marzano which are available year round. Diced, canned tomatoes will also work.
  • Vegetable broth– We love Better than Bouillon for condensed stock/base. Chicken broth will also work beautifully.
  • Basil– We definitely suggest fresh basil for this recipe.
  • Whole milk- Or cream. Cashew cream or unsweetened coconut milk can be used as dairy-free options.
  • Baking soda– This magic ingredient helps to cut the soup’s acidity and to prevent the milk from curdling.

👩‍🍳 How to Make Vitamix Tomato Soup

Step 1: Cook onion and garlic.

Step 2: Combine tomatoes, broth, tomato paste, balsamic, seasoning, basil, cooked onion & garlic, and carrots in Vitamix or blender.

Step 3: Blend on high for 4-5 minutes or until well-blended and steam starts to escape from lid plug.

Step 4: Add milk and blend for an additional minute. Turn off Vitamix and manually stir baking soda into the soup. 

Step 5: Sprinkle soup with your favorite toppings and serve!

✔️Expert Tips & Tricks

Liquid ingredients first– Add ingredients to blender in the order listed in the recipe card. Specifically, be sure to add liquid ingredients to your Vitamix first, as this helps prevent air pockets from forming around the blades and keeps the blades from stalling as contents are blended.

Blend on high– If using a Vitamix, be sure to start on low speed but quickly ramp up to high. Blending on high decreases blend time and also helps keep the motor cool. Visit the Vitamix website for more Vitamix blending tips and tricks.

Traditional blenders– While we love being able to make this soup almost entirely in our Vitamix, if you don’t have a high-powered blender, simply make the soup in a regular blender, transfer to a sauce pan and simmer it on the stove for about 5-8 minutes.

Steam carrots If your blender isn’t powerful enough to break down carrots into a purée, you can steam carrots ahead of time. If you don’t have extra time to steam carrots, simply ditch the carrots and replace with an extra Tbsp of sugar. You’ll lose the nutrients, but retain the sweetness of the tomato soup.

🧂Variations and Substitutions

Fresh tomatoes– We love the sweet flavor of whole, peeled tomatoes! If you want to make this Vitamix tomato soup with fresh tomatoes, just be sure to steam/boil the tomatoes and remove skins ahead of time.

Vegan options-  Simply replace the whole milk with unsweetened coconut milk or cashew cream. And make sure that your vegetable stock/broth is vegan. Surprisingly, some aren’t. 

Chicken broth– Chicken broth can be used instead of vegetable broth if you are looking for a meatier flavor.

Add spice– Feel free to spice up this soup by adding a pinch of red pepper flakes or cayenne.

Garnish– Jazz up your tomato soup by adding shredded parmesan, extra basil, pepitas, parmesan crisps, croutons, goldfish crackers (our kids’ fave!) or oyster crackers!

🥗 Side Suggestions

With this tomato soup recipe, it’s all about the dipping!  We recommend dunking a grilled cheese sandwich, homemade baked cheese crisps, crusty bread, or your favorite crackers into this soup. 

In terms of sides, we love paring this soup with a simple salad, veggie side dish, like roasted asparagus, or tasty sandwiches, like these roast beef sliders, sloppy joes, or turkey burger sliders.

👦🏼 Tips for Picky Eaters

Kids pick a side- You can’t go wrong serving this soup with a grilled cheese sandwich! Or, select simple sides like sliced cucumbers, side salads, baked potatoes, or cream cheese pasta!

Kids choose toppings– Let kids choose how to jazz up their soup. Oyster crackers, goldfish, or parmesan cheese are all great options!!

Straw bowls! Our kids love the bowls that have built-in straws. These straw bowls are cheap and provide for endless dinnertime entertainment.

You may store this soup in the fridge in an airtight container for up to 3 days. To reheat, simply microwave or warm soup on the stove.  

This soup can be stored in the freezer for up to 2 months.

How can I thicken my soup?

If you’d like to thicken your soup, you can add a thickening agent, like cornstarch or flour. Don’t add it directly to the soup, as it may clump. Instead, whisk together 1 T cornstarch and 1 T cold water in a small bowl. Then slowly pour it into the soup, stirring until thickened enough. 

How does soup cook in a Vitamix?

The Vitamix can be used to make soup in under 10 minutes using the friction of its blades. The device quickly heats raw ingredients and can bring soup to a temperature of 170°F.

How do I know when my soup is ready to serve?

We recommend blending this Vitamix tomato soup on high for at least 5 minutes and until you see steam start to escape from the lid plug.

Is this Vitamix tomato soup vegetarian?

Yes, this soup does not contain any meat, seafood or poultry products, and is considered vegetarian.

To make our Vitamix tomato soup vegan, simply replace the whole milk with unsweetened coconut milk and make sure your vegetable stock/broth is vegan.

🍅 Vitamix Tomato Soup

If you love cozy soup nights, don't miss our amazing Vitamix Tomato Soup! This soup blends tomatoes and seasonings to create a velvety texture and savory flavor that will warm your belly on these cold nights!

Equipment

  • Vitamix or blender

Ingredients
  

  • 1 Tablespoon olive oil
  • 1/4 large onion (roughly chopped)
  • 1 clove garlic (minced)
  • 28 ounce can whole peeled tomatoes
  • 1/2 cup vegetable broth
  • 1/4 cup tomato paste
  • 1 Tablespoon balsamic vinegar
  • 1/2 Tablespoon sugar
  • 2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 Tablespoon fresh basil (optional: plus extra for serving )
  • 8 baby carrots
  • 1 cup whole milk
  • 1/2 teaspoon baking soda 

Instructions
 

  • Heat a regular-sized pan to low-medium heat and add olive oil. Once oil is heated, add onions and garlic. Cook for 3 minutes, stirring occasionally. Remove onions and garlic from pan and set aside.
  • Add whole peeled tomatoes (with juices), vegetable broth, tomato paste, balsamic vinegar, sugar, salt, pepper, basil, cooked onion & garlic, and carrots to Vitamix (or blender).
  • Turn on blender and gradually increase to high-speed for 4-5 minutes or until well-blended and smooth. Continue blending in Vitamix until steam starts to escape from the lid plug and soup is hot.
    Note: If using a blender, transfer soup to the stove, bring to a boil, and reduce to a simmer for 5-8 mins.
  • Add milk and blend for an additional minute. Turn off Vitamix and manually stir baking soda into the soup. 
  • Sprinkle soup with any of these garnishes: fresh basil, shredded parmesan cheese, pepitas, goldfish crackers, croutons, oyster crackers. Enjoy!
